Glaze Ingredients

  • 1 cup 1 cup brown sugar Packed brown sugar for sweetness.
  • 1/2 cup 1/2 cup honey For a rich, sweet flavor.
  • 2 tablespoons 2 tablespoons Dijon mustard Adds a tangy flavor.
  • 1/4 teaspoon 1/4 teaspoon ground cloves Spice for depth of flavor.
  • 1/4 teaspoon 1/4 teaspoon cinnamon For warmth and sweetness.
  • 1/4 cup 1/4 cup apple juice Adds moisture and sweetness.

Preparation

  • Preheat the oven to 325°F (165°C).
  • Place the ham in a roasting pan, cut side down. Score the surface in a diamond pattern.

Making the Glaze

  • In a saucepan, combine brown sugar, honey, Dijon mustard, ground cloves, cinnamon, and apple juice. Heat over medium until the sugar dissolves.
  • Brush the glaze generously over the ham, reserving some for basting later.

Baking

  • Cover the ham loosely with aluminum foil and bake for about 15 minutes per pound, basting every 30 minutes.
  • In the last 30 minutes, remove the foil to allow the glaze to caramelize.

Serving

  • Check for doneness; the ham should reach an internal temperature of 140°F (60°C).
  • Let the ham rest for about 15 minutes before slicing.

Notes

Save some extra glaze for serving or drizzling over slices when plating. Experiment by adding orange juice or a splash of bourbon to the glaze.
