  • 1 cup plain Greek yogurt The thicker, the better!
  • 1.5 cups almond flour
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon salt

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a bowl, whisk together the Greek yogurt and eggs until well combined.
  • In another bowl, stir together the almond flour, baking powder, and salt. If using herbs or spices, add them now.
  • Slowly add the dry ingredients into the wet mixture, stirring gently until combined.
  • Pour the batter into a greased loaf pan and smooth the top with a spatula.

Baking

  • Place the pan in the oven and bake for about 30-35 minutes, or until a toothpick inserted in the middle comes out clean.
  • Let the bread cool in the pan for about 10 minutes before transferring it to a wire rack.

Notes

Using Greek yogurt gives the bread richness and moisture. Store in an airtight container for up to three days or freeze sliced for later use. For added flavor, consider adding shredded cheese or diced jalapeños.
