  • 2 large zucchinis Nature's little miracles
  • 1 cup shredded mozzarella cheese Cheese makes everything better
  • 1/2 cup cream cheese Use softened for easier mixing
  • 1/4 cup grated Parmesan cheese Add flavor and depth
  • 2 cloves garlic, minced Because garlic makes everything better
  • Salt and pepper to taste
  • Fresh herbs for garnish Optional but highly recommended

Preparation

  • Wash the zucchinis and slice them into thin rounds.
  • In a large non-stick skillet, add a little oil or cooking spray. Toss in the zucchini rounds and sauté for about 5-7 minutes until they start to soften. Sprinkle with salt and pepper to taste.
  • In a separate bowl, combine the cream cheese, shredded mozzarella, garlic, and grated Parmesan. Mix until smooth.
  • Add the sautéed zucchini to the cheese mixture and fold everything together gently.
  • Transfer everything into a baking dish, spreading it out evenly. Preheat the oven to 350°F (175°C) and bake for about 15-20 minutes or until the top is bubbly and golden.
  • Once it’s out of the oven, sprinkle fresh herbs on top for added flavor.

Notes

Feel free to mix up the cheese varieties; cheddar or a cheese blend works well. If your zucchini is watery, salt it before cooking to draw out excess moisture. This dish is perfect for leftovers; simply reheat it in the oven or microwave.
