  • 4 cups yellow squash, sliced (about 4 medium squash)
  • 1 medium onion, chopped
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 2 large eggs
  • 1 cup crushed buttery crackers (like Ritz)
  • 3 tablespoons butter, melted
  • Salt and pepper to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, bring water to a boil. Add the sliced yellow squash and chopped onion. Cook for about 5 minutes until they're tender. Drain and set aside to cool.

Mixing and Layering

  • In a large bowl, combine the cooled squash mixture with the shredded cheddar cheese, sour cream, and eggs. Season with salt and pepper to taste. Mix until fully combined.
  • Transfer the mixture to a greased, 9x13-inch baking dish and flatten the top with a spatula.
  • Pour the melted butter over the crushed crackers, stirring until well-coated, then sprinkle over the casserole.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and bubbling.
  • Once baked, let it cool for a few minutes before serving.

Notes

For a different flavor, substitute yellow squash with zucchini or mix both. You can also add garlic or cayenne pepper for added spice. For extra crunch, fresh breadcrumbs are a great alternative to crackers.
