For the soup

  • 1 medium head medium head of cabbage, chopped
  • 2 large large carrots, sliced
  • 1 large bell pepper, chopped
  • 1 large onion, chopped
  • 3 stalks stalks of celery, diced
  • 4 cloves cloves garlic, minced
  • 8 cups vegetable broth
  • 1 can diced tomatoes (with juices)
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Cooking Steps

  • In a large pot over medium heat, sauté the onion, garlic, and celery until fragrant, about 3–4 minutes.
  • Add the chopped carrots and bell pepper. Stir everything together and let them cook for an additional 5 minutes.
  • Stir in the chopped cabbage, diced tomatoes, thyme, and vegetable broth. Bring to a boil, then reduce the heat and let simmer for approximately 30 minutes.
  • Season with salt and pepper according to your preference.

Notes
