Dressing Ingredients

  • 1 large lemon, juiced
  • 2 tablespoons olive oil
  • 1 tablespoon honey or maple syrup Use honey for a non-vegan option
  • Salt and pepper to taste

Instructions
 

Preparation

  • Start by peeling and grating the carrots. Use a food processor if available for easier grating.
  • Shred the cabbage finely, or chop it into julienne strips, depending on your preference.

Mixing

  • In a large bowl, combine the grated carrots, shredded cabbage, raisins (or cranberries), and sunflower seeds. Toss well to mix.

Making the Dressing

  • In a small bowl, whisk together the lemon juice, olive oil, honey (or maple syrup), salt, and pepper.
  • Taste and adjust the seasonings as needed.

Combining

  • Drizzle the dressing over the salad mixture and gently toss to combine.
  • Let it chill in the fridge for about 15-20 minutes to allow the flavors to mingle.

Serving

  • Just before serving, toss in the chopped cilantro or parsley for a fresh herbaceous flavor.

Notes

For added crunch, don't skip on the sunflower seeds! Feel free to experiment with added veggies like bell peppers or radishes for more color.
