Preparation

  • In a large bowl, combine the cooked quinoa, crumbled feta, chopped olives, onion, garlic, breadcrumbs, and eggs. Season with salt and pepper to taste. Ensure the mixture is moist but holds together well.
  • With clean hands, take a small amount of the mixture and shape it into patties, about the size of your palm.

Cooking

  • Heat a generous drizzle of olive oil in a frying pan over medium heat.
  • Once hot, carefully place the patties in the pan with space in between. Cook each side for about 4-5 minutes or until golden brown.

Serving

  • Remove the patties from the pan and place them on a paper towel to absorb excess oil. Serve warm with a squeeze of lemon or your favorite dipping sauce.

Notes

These patties can be made ahead of time and stored in the fridge or frozen for convenience. Feel free to experiment with spices like cumin or chili flakes for a flavor boost.
