Broth Ingredients

  • 4 cups vegetable broth
  • 2 tablespoons soy sauce
  • 2 tablespoons tahini or sesame paste
  • 1 tablespoon rice vinegar
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder

Main Ingredients

  • 200 g ramen noodles
  • 1 cup sliced shiitake mushrooms
  • 1 cup sliced bok choy
  • 1 cup baby spinach
  • 1 tablespoon sesame oil
  • to taste sesame seeds for garnish
  • to taste chopped green onions for garnish

Preparation

  • Heat the vegetable broth in a large pot over medium heat. Once simmering, add garlic powder, ginger powder, soy sauce, tahini, and rice vinegar.
  • In a separate pot, cook the ramen noodles according to package instructions, usually about 4-5 minutes. Drain and set aside.
  • In another pan, heat sesame oil over medium heat. Add shiitake mushrooms and bok choy and sauté for 3-4 minutes until softened. Then, add baby spinach and cook until wilted.

Combining

  • Pour the flavored broth into the sautéed vegetables and stir gently.
  • Add the cooked ramen noodles and mix thoroughly.

Serving

  • Ladle the vegan sesame ramen into bowls. Sprinkle with sesame seeds and top with chopped green onions before serving.

Notes

Customize your veggies and proteins for added nutrition. Consider adding tofu, tempeh, or chickpeas for more filling options. Add chili flakes or sriracha for a spicy kick.
