Ingredients
  

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt

Wet Ingredients

  • 2 large eggs
  • 1/2 cup milk
  • 3 tablespoons unsalted butter, melted
  • 2 teaspoons vanilla extract

For Frying

  • Oil for frying (vegetable or canola)
  • Powdered sugar for dusting

Instructions
 

Preparation

  • In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  • In another bowl, combine the eggs, milk, melted butter, and vanilla extract. Whisk until smooth and bubbly.
  • Pour the wet ingredients into the dry ingredients and stir until just combined.

Frying

  • Heat oil in a deep skillet over medium heat to about 350°F (175°C).
  • Drop small dollops of batter into the hot oil, and fry until golden brown, about 2-4 minutes on each side.
  • Remove beignets and place on paper towels. Dust liberally with powdered sugar.

Serving

  • Serve warm with your favorite jam or whipped cream.

Notes

Don't overmix your batter for light and fluffy beignets. You can substitute applesauce for eggs and store leftovers in an airtight container.
