  • In a medium bowl, whisk together the almond milk, honey (or maple syrup), and vanilla extract until well mixed.
  • Stir in the chia seeds, ensuring they’re evenly distributed throughout the mixture.
  • Cover the bowl and let it sit in the refrigerator for at least 4 hours, or overnight if you prefer.
  • Once the pudding has thickened, give it a good stir and serve with your favorite toppings.

Notes

Make it ahead of time! This pudding can be made up to three days in advance. Feel free to skip the sweetness if you're using ripe fruits as toppings.
