Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour
  • 2 tablespoons sugar for sweetness
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk or regular milk works if you're in a pinch
  • 1 large egg
  • 2 tablespoons melted butter plus extra for the pan

Optional Toppings

Preparation

  • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.
  • In another bowl, combine the buttermilk, egg, and melted butter. Mix until it’s all combined.
  • Pour the wet mixture into the dry and gently fold them together. Be careful not to overmix.

Cooking

  • Preheat your skillet or griddle over medium heat and grease it with butter.
  • Ladle about 1/4 cup of the batter onto the skillet for each pancake.
  • When bubbles form on the surface (about 2-3 minutes), flip the pancakes and cook for another 1-2 minutes until golden brown.
  • Repeat until all the batter is used.

Serving

  • Stack the pancakes high and top with maple syrup, fresh fruit, or whipped cream.

Notes

Make a batch ahead of time and freeze them for quick breakfasts. Substitute buttermilk with a homemade version using milk and vinegar or lemon juice.
