  • 1 medium head medium head of cabbage (about 2 pounds)
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 3 cloves garlic cloves, minced
  • 1 cup vegetable or chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon apple cider vinegar (optional) Adds a wonderful zing
  • 1 tablespoon sugar To balance out the flavors

  • Crushed red pepper For some heat
  • Carrots or bell peppers For color and nutrition

Instructions
 

Preparation

  • Start by removing any rough outer leaves from the cabbage. Cut it in half, then into quarters, and finally slice thinly into ribbons.

Cooking

  • In a large skillet or pot, heat olive oil over medium heat.
  • Add the sliced onion and cook until translucent, about 5 minutes.
  • Toss in the minced garlic and sauté for another minute until fragrant.
  • Add the sliced cabbage to your skillet and stir everything together.
  • Pour in the vegetable or chicken broth, sprinkle in the salt and pepper, and if desired, add that apple cider vinegar for a tangy kick.
  • Cover and let it simmer for about 15-20 minutes, or until the cabbage is tender.
  • Just before serving, stir in the sugar to bring out the cabbage’s natural sweetness.
  • Give your dish a final taste and adjust the seasoning if necessary. It’s ready to serve—deliciously simple!

Notes

Leftovers can be stored in the fridge for up to 3 days. You can prep everything ahead of time up until the simmering step.
