  • 1 cup fresh or frozen cranberries If using fresh, make sure they’re not too sour!
  • 1 cup fresh pineapple chunks Alternatively, use canned; just drain and rinse them.
  • 1 large banana The riper, the better for sweetness.
  • 1 cup spinach Kids won’t know it's there!
  • 1 cup coconut water Provides a tropical flair.
  • 1 tablespoon honey or maple syrup Optional, depending on your desired sweetness.

Preparation

  • In a high-speed blender, combine cranberries, pineapple chunks, banana, and spinach.
  • Add the coconut water to the blender for easier blending.
  • If desired, drizzle in honey or maple syrup for sweetness.
  • Blend on high until smooth, about 30 seconds to 1 minute. If too thick, add more coconut water.
  • Taste the smoothie and adjust sweetness if needed.
  • Pour into glasses or bowls and top with fresh cranberries or pineapple chunks.

Notes

If making for a crowd, consider doubling the recipe and storing extras in the freezer. For added nutrition, toss in protein powder or flaxseeds. Blend spinach separately if worried about kids spotting it.
