For the Fritters

  • 1 cup fresh pineapple, diced for that sweet, juicy sensation
  • 1 cup all-purpose flour the base for all things lovely
  • 1 tablespoon sugar a bit of sweet never hurt anybody
  • 1 tablespoon baking powder to bring that fluff!
  • ½ teaspoon salt just a pinch to balance flavors
  • 1 large egg the binder to hold it all together
  • ½ cup milk for that dreamy texture
  • oil for frying because we want that golden-brown goodness

Preparation

  • Start by dicing the fresh pineapple into bite-sized pieces.
  • In a mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk until evenly mixed.
  • In another bowl, beat the egg and add the milk. Whisk until smooth and combined.
  • Slowly pour the wet mixture into the dry ingredients. Stir until just combined, leaving some lumps.
  • Gently fold the diced pineapple into the batter.
  • In a deep skillet, heat the oil to around 350°F (175°C) for frying.

Cooking

  • Carefully spoon dollops of the batter into the hot oil. Fry for 2-3 minutes on each side until golden brown.
  • Remove the fritters from the oil and place them on paper towels to drain any excess oil.

Notes

Try dusting your fritters with powdered sugar before serving for extra glamour. You can substitute pineapple with apples, bananas, or blueberries for variety.
