  • 4 pieces bone-in, skin-on chicken thighs Because who doesn’t love crispy skin?
  • 1 tablespoon olive oil
  • Salt Salt and pepper to taste
  • 4 pieces shallots, halved Don’t worry, the tears are worth it!
  • 2 cups seedless grapes Red or green; both work like magic.
  • 3-4 sprigs fresh thyme Your house will smell like a herb garden.
  • 1 cup chicken broth To keep everything moist.

Preparation

  • Preheat your oven to 425°F (about 220°C). Grab a baking dish, and drizzle it with olive oil. Season the chicken thighs with salt and pepper.

Cooking

  • Place the seasoned chicken thighs skin-side down in the dish and sear for about 5-7 minutes over medium-high heat.
  • Flip them over and add in your halved shallots.
  • Add the grapes, nestling them around the chicken, and top with fresh thyme.
  • Carefully pour in the chicken broth.
  • Roast in the preheated oven for about 30-35 minutes, until the chicken is golden brown and reaches an internal temperature of 165°F.

Serving

  • After removing from the oven, let the dish rest for a few minutes, then serve with the sauce.

Notes

Don’t skimp on the thyme for maximum flavor. Feel free to add veggies like carrots, bell peppers, or zucchini. Leftovers can be shredded and added to a salad or sandwich.
