  • 2 tablespoons honey or maple syrup to sweeten
  • 1/4 teaspoon salt to enhance flavors
  • 1/4 cup shredded coconut for extra coconut flavor

Preparation

  • In a medium saucepan, combine the rolled oats with coconut milk. Bring to a gentle boil over medium heat.
  • Once boiling, stir in the honey (or syrup) and salt. Lower the heat and let simmer for about 5-7 minutes, stirring occasionally until desired consistency is reached.
  • Stir in the shredded coconut and let it heat for another minute.
  • Serve in bowls, adding your favorite fresh fruit on top and a sprinkle of cinnamon if desired.

Notes

For personalized toppings, consider sliced almonds, Greek yogurt, or nut butter. Refrigerate any leftovers for up to three days. Add a splash of milk when reheating.
