  • 12 ounces breakfast sausage or your favorite sausage of choice
  • 4 cups diced potatoes fresh or frozen will work
  • 1 cup chopped bell peppers red, green, or whatever you have
  • 1 cup maple syrup
  • 4 large eggs
  • 1 cup milk whole or your preferred alternative
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper
  • as needed Fresh parsley for garnish

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet over medium heat, cook the breakfast sausage until browned. Drain the excess fat and set it aside.
  • In a large bowl, combine the cooked sausage, diced potatoes, and chopped bell peppers. Mix in the garlic powder, onion powder, salt, and pepper.
  • In another bowl, whisk together the eggs, milk, and maple syrup.
  • Pour the sausage and potato mixture into a greased casserole dish, then pour the egg and syrup mixture over the top.
  • Bake for about 35-40 minutes, or until the eggs are set and the top is golden brown.
  • Remove from the oven, let cool for a few minutes, then garnish with fresh parsley and slice to serve.

Notes

Make Ahead: Assemble the casserole the night before and refrigerate. Leftovers make for a fantastic breakfast the next day. Feel free to add spinach or kale for more greens.
