For the Tart

  • 2 large large onions (preferably yellow) Sliced thinly
  • 2 tablespoons olive oil For sautéing
  • 1 tablespoon butter For sautéing
  • 1 tablespoon balsamic vinegar To add flavor to the onions
  • 1 sheet of puff pastry (thawed) For the tart shell
  • 1 cup crumbled goat cheese Or your cheese of choice
  • Fresh herbs (like thyme or rosemary) For garnish
  • Salt and pepper To taste

Preparation

  • Start by slicing the onions thinly.
  • In a large skillet, heat the olive oil and butter over medium heat.
  • Add the onions, a pinch of salt, and a dash of pepper. Stir well.
  • Cook the onions, stirring occasionally, until soft and caramelized, about 15-20 minutes.
  • Stir in the balsamic vinegar and cook for another minute.
  • Preheat your oven to 400°F (200°C) and roll out the puff pastry on a lightly floured surface.
  • Place the rolled pastry into your tart or pie pan and trim excess.
  • Pour the caramelized onions into the pastry shell and sprinkle the goat cheese on top.
  • Bake in the oven for about 25-30 minutes, or until the pastry is golden brown and puffy.
  • Once out of the oven, garnish with fresh herbs, slice, and serve.

Notes

Feel free to substitute goat cheese for feta, Gruyère, or mozzarella. You can prepare the onions a day or two in advance and reheat before adding to the tart shell.
