  • 3-4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3-4 cloves garlic, minced
  • 4 medium carrots, cut into chunks
  • 4 medium potatoes, diced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 1-2 sprigs fresh rosemary (or 1 teaspoon dried)
  • 1-2 sprigs fresh thyme (or 1 teaspoon dried)
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat the olive oil in a large pot or dutch oven over medium-high heat.
  • Season the beef chuck roast generously with salt and pepper, and sear it in the pot until browned on all sides, about 3-4 minutes per side.
  • Remove the roast temporarily and sauté the chopped onion and minced garlic in the same pot until the onions become translucent.
  • Return the roast to the pot and surround it with the carrots and potatoes.
  • Pour in the beef broth and Worcestershire sauce; add the fresh herbs (if using) and bring everything to a gentle simmer.

Cooking

  • Cover your pot and transfer it to a preheated oven at 275°F (135°C). Cook for about 3-4 hours, or until the beef is fork-tender.

Serving

  • Once done, take the pot out of the oven and let it sit for a moment before serving.
  • Spoon the delicious broth over the meat and veggies, and share the joy with your family.

Notes

You can use a slow cooker by following the same steps but set it on low for 8 hours. This pot roast is great in sandwiches, salads, or savory soups.
