Ingredients
  

For the filling

  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/3 cup sun-dried tomatoes, diced (oil-packed) For extra flavor
  • 1 cup mozzarella cheese, shredded

For the sandwich

  • 4 slices favorite bread (sourdough works wonders)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a medium bowl, combine the ricotta, chopped spinach, diced sun-dried tomatoes, and a pinch of salt and pepper. Mix until it’s a creamy, colorful blend.

Assembly

  • Take two slices of your chosen bread and generously spread the ricotta filling on one side. Top it with shredded mozzarella, then crown it with another slice of bread. Repeat for the second sandwich.

Cooking

  • In a skillet, heat 1 tablespoon of olive oil over medium heat. Once sizzling, gently place your first sandwich in the pan. Cook for about 3-4 minutes until it’s beautifully golden brown. Press it down slightly to help everything melt together.
  • Carefully flip the sandwich and add the remaining olive oil if the pan looks dry. Cook the other side for another 3-4 minutes until golden and melty.

Serving

  • Once both sandwiches are cooked to perfection, slice them in half, plate them up, and prepare for compliments.

Notes

You can mix and match cheeses based on your preference. For added crunch, spread butter on the outside of the bread before grilling. For variations, consider adding sautéed mushrooms or roasted peppers.
