Ingredients
  

For the crust

  • 1 package sugar cookie dough (store-bought or homemade)

For the filling

  • 2 packs cream cheese (softened) Make sure it's room temperature for easy mixing.
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

For topping

  • to taste whipped cream
  • to taste optional toppings: sprinkles, chocolate chips, or fresh fruit

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • Spread the sugar cookie dough evenly in the bottom of a greased 9-inch springform pan.
  • Bake for about 10-12 minutes or until the edges are golden but the center is still soft. Let it cool.

Making the Filling

  • In a mixing bowl, beat the softened cream cheese and sugar together until smooth.
  • Add the eggs one at a time, mixing well after each addition.
  • Finally, stir in the vanilla extract.

Combining and Baking

  • Pour the cheesecake mixture over the cooled sugar cookie crust. Smooth out the top with a spatula.
  • Bake for about 30-35 minutes or until the edges are set and the center slightly jiggles.

Chilling

  • Let the cheesecake cool to room temperature, then refrigerate for at least 4 hours (or overnight) to allow it to set fully.

Serving

  • Top the cheesecake with whipped cream and your choice of toppings. Slice and enjoy!

Notes

Allow your cream cheese to reach room temperature before mixing for easier blending. Do not overbake; the cheesecake should be set around the edges but still slightly jiggly in the center.
