  • 4 cups cooked chicken, shredded or diced You can use leftover chicken or rotisserie chicken.
  • 3 cups fresh spinach leaves
  • 2 cups strawberries, sliced Fresh strawberries are recommended.
  • 1/2 cup pecans, chopped Walnuts can be used as an alternative.
  • 1/4 cup red onion, thinly sliced Optional if you prefer a milder taste.
  • 1/2 cup poppyseed dressing Store-bought or homemade.
  • to taste salt and pepper

Instructions
 

Preparation

  • If your chicken isn't already cooked, boil or grill it until fully cooked. Shred or dice it into bite-sized pieces.
  • In a large bowl, place your fresh spinach leaves.
  • Toss in the sliced strawberries.
  • Add the chopped pecans and thinly sliced red onion.
  • Drizzle the poppyseed dressing over the salad and toss gently until well combined.
  • Give it a pinch of salt and a dash of pepper, and adjust to your taste.

Notes

This salad is great for meal prepping! Keep the dressing separate until you're ready to eat to avoid soggy greens. Feel free to customize with different nuts or add feta cheese. Don't stress about presentation – it will still taste fabulous!
