Ingredients
  

For the Cake

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup milk
  • 3.5 tsp baking powder
  • 1 tsp vanilla extract
  • 0.5 tsp salt
  • 1.5 cups fresh strawberries, quartered Use ripe strawberries for the best flavor.

For the Frosting

  • 1 cup heavy cream
  • 0.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 1 cup strawberries, pureed

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Whisk it all together.
  • In another bowl, cream together the softened butter and sugar until light and fluffy.
  • Add milk and vanilla to the butter mixture, mixing until smooth. Slowly incorporate the dry ingredients until just combined.
  • Gently fold in the quartered strawberries.

Baking

  • Pour the batter into two greased 9-inch round cake pans.
  • Bake for 25-30 minutes, or until a toothpick comes out clean.
  • Let the cakes cool in the pans for about 10 minutes, then transfer them to a wire rack to cool completely.

Frosting and Assembly

  • In a clean bowl, whip the heavy cream until soft peaks form. Gradually add the powdered sugar and vanilla extract, then fold in the pureed strawberries.
  • Once the cakes are completely cool, layer them with the strawberry frosting.
  • Optionally, garnish with additional fresh strawberries.

Notes

You can bake the cakes a day in advance and frost them just before serving. If fresh strawberries aren’t in season, frozen ones work too, just thaw and drain them.
