  • 8 slices slices of thick bread (challah or brioche)
  • 8 oz cream cheese, softened
  • 1/4 cup sugar
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, sliced
  • 4 large eggs
  • 1 cup milk
  • 1 tsp ground cinnamon
  • Butter for cooking
  • Maple syrup for serving

Preparation

  • In a mixing bowl, blend the softened cream cheese, sugar, and vanilla extract until smooth. Fold in the sliced strawberries carefully.
  • Take a slice of bread and spread a generous scoop of the cream cheese mixture on another slice, then press them together to form a sandwich. Repeat for all slices.
  • In a separate bowl, whisk together the eggs, milk, and ground cinnamon until well combined.

Cooking

  • Preheat a skillet over medium heat and add a knob of butter.
  • Dip each stuffed sandwich into the egg mixture, ensuring both sides are coated. Cook in the skillet until golden brown, about 3-4 minutes per side.

Serving

  • Stack your stuffed French toast on a plate, drizzle with maple syrup, and garnish with fresh strawberries.

Notes

Prepare the filling the night before for easier morning prep. A dusting of powdered sugar on top adds a fancy touch. If the filling squeezes out while cooking, don't worry; it's part of the experience!
