Ingredients
  

For the Cheesecake Filling

  • 2 cups cream cheese, softened Ensure cream cheese is softened for easy mixing.
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract For flavor.
  • 1 cup fresh strawberries, diced Fresh strawberries are ideal, but other fruits can be substituted.

For the Crunch Coating

  • 2 cups crushed graham crackers
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup melted butter Ensure it's melted to combine well.

Preparation

  • In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Blend until the mixture is nice and smooth.
  • Gently fold in the diced strawberries, being careful not to turn them into mush.

Chill

  • Cover the cheesecake mixture and let it chill in the refrigerator for about 30 minutes.

Crunch Coating

  • Mix the crushed graham crackers and shredded coconut in a bowl.
  • Add the melted butter and stir until the mixture resembles damp sand.

Form the Bites

  • Use a small scoop or your hands to form bite-sized balls from the chilled cheesecake filling.
  • Roll each ball in the graham cracker mixture until fully coated.

Chill Again

  • Place the coated bites on a baking sheet and return them to the refrigerator for at least another 30 minutes.

Serve

  • Take them out of the fridge and enjoy as they quickly disappear!

Notes

These bites can be made a day in advance and stored in an airtight container in the fridge. You can substitute cream cheese with Greek yogurt for a lighter version.
