For the Chicken

  • 1 pound chicken thighs, boneless and skinless You can also use chicken breast if you prefer
  • 1/2 cup orange juice Freshly squeezed is best!
  • 1/4 cup soy sauce
  • 1/4 cup honey Or maple syrup for a twist
  • 2 cloves garlic, minced
  • 1 tablespoon minced fresh ginger
  • a pinch red pepper flakes For those who like a bit of kick
  • to taste salt and pepper

For the Yum Yum Sauce

  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon rice vinegar
  • 1 teaspoon sugar
  • about 1/2 teaspoon garlic powder and paprika Adjust according to taste

For the Bowl

  • 4 servings cooked rice or quinoa Whatever you fancy
  • 1 cup steamed broccoli or your favorite veggies
  • to garnish sesame seeds
  • to taste chopped green onions Optional but highly recommended

Instructions
 

Marinating the Chicken

  • In a bowl, mix the orange juice, soy sauce, honey, garlic, ginger, red pepper flakes, and season with salt and pepper. Add your chicken thighs, ensuring they are completely submerged in this flavor party. Cover and let it marinate for at least 30 minutes—if you can resist, let it hang out longer in the fridge!

Cooking the Chicken

  • Heat a skillet over medium heat and add a splash of oil. Once hot, add the marinated chicken, cooking for about 5-7 minutes on each side or until golden brown and cooked through. As the chicken cooks, pour the leftover marinade into the skillet and let it bubble away until it thickens into a sticky glaze.

Making the Yum Yum Sauce

  • While the chicken’s cooking, mix all the sauce ingredients in a small bowl. Adjust according to your taste—maybe you want it tangier? A little more ketchup? It’s your show!

Assembling the Bowls

  • Grab your cooked rice or quinoa as a base, layer it with steamed veggies, and place that glorious sticky orange chicken on top. Drizzle with Yum Yum sauce, sprinkle some sesame seeds, and toss on those green onions if you’re feeling fancy.

Notes

If short on time, pre-chopped veggies and rotisserie chicken can save you. Use maple syrup or agave as a honey substitute. For visual appeal, double the sauce and serve it on the side for dipping.
