  • 1 lb Italian sausage (sweet or spicy) Feel free to use chicken or turkey sausage for a lighter version.
  • 2 cups asparagus Trimmed and cut into bite-sized pieces.
  • 1 medium bell pepper Any color, sliced into strips.
  • 1 cup cherry tomatoes Halved.
  • 1 medium onion Sliced.
  • 2 tablespoons olive oil For cooking.
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper

Cooking Instructions

  • In a large skillet, add the olive oil and warm it up over medium heat.
  • Add the Italian sausage, breaking it apart with a spatula as it cooks for 5-7 minutes until browned.
  • Toss in the onion, asparagus, and bell pepper and sauté for another 5-6 minutes until slightly tender.
  • Add the cherry tomatoes, garlic powder, Italian seasoning, and a sprinkle of salt and pepper, cooking for another 2 minutes.
  • Taste, adjust seasoning if necessary, and serve warm. Enjoy it on its own or over rice or quinoa.

Notes

You can customize the veggies as per your preference. This dish is great for using up leftover vegetables. Leftovers can be stored in an airtight container for up to three days.
