  • 4 large large russet potatoes (or any starchy variety)
  • 1 cup shredded cheese (cheddar works wonderfully)
  • 1/2 cup sour cream
  • to taste salt and pepper
  • 2 tablespoons butter
  • black olives (for decorating)

Preparation

  • Preheat your oven to 400°F (200°C).
  • Wash and scrub the potatoes to remove dirt. Cut a thin slice from the top of each potato to create a 'head'.
  • Scoop out the potato flesh, leaving a half-inch thick 'skull' shell. Save the scooped potato for later.

Mixing and Stuffing

  • In a bowl, mash the scooped potato with butter, sour cream, cheese, salt, and pepper. Add any additional spices if desired.
  • Fill each hollow potato skull with the creamy mixture.
  • Cut black olives to create eyes and a nose, and place them on the potato filling.

Baking

  • Place the stuffed skull potatoes on a baking sheet and bake for 25-30 minutes, or until the tops are golden and crispy.
  • Once baked, let them cool for a minute before serving.

Notes

Don't sweat the scooping—it adds to the charm! This recipe is great for kids to help with decorating. To make it a meal, add cooked sausage, bacon, or veggies to the filling.
