Ingredients
  

For the Spicy Pineapple Chicken

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 1 cup fresh pineapple, diced (or canned)
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 tablespoon honey
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • to taste Salt & pepper

For the Jalapeño Basil Ranch

  • 1/2 cup plain Greek yogurt
  • 1/4 cup mayonnaise
  • 1 whole jalapeño, seeded and chopped (keep some seeds if you like it hot)
  • 1/4 cup fresh basil leaves, chopped
  • 1 tablespoon lemon juice
  • to taste Salt and pepper

For Assembly

  • 8 pieces Small corn or flour tortillas
  • to taste Fresh toppings like diced tomatoes, avocado, lime wedges, and extra pineapple

Instructions
 

Preparation

  • In a mixing bowl, combine olive oil, soy sauce, honey, chili powder, garlic powder, cayenne pepper, salt, and pepper. Add in diced chicken and marinate for 15–30 minutes.

Cooking

  • In a large skillet over medium-high heat, add marinated chicken and cook for about 5–7 minutes until golden and cooked through.
  • Add the pineapple and stir for an extra 2–3 minutes.

Ranch Preparation

  • In a bowl, mix together the Greek yogurt, mayonnaise, chopped jalapeño, basil, lemon juice, salt, and pepper.

Assembly

  • Layer tortillas with spicy chicken and pineapple mixture, then add toppings including diced tomatoes, avocado, lime juice, and drizzle with Jalapeño Basil Ranch.

Notes

You can swap out the chicken for shrimp or tofu if you want. Marinate chicken a day ahead for more flavor. Doubling the ranch is highly recommended!
