Preparation

  • Begin by spiralizing the zucchinis into noodles. You can also use a vegetable peeler for thin strips.

Cooking

  • Heat the olive oil in a large skillet over medium heat. Add the minced garlic and sauté for about 30 seconds, until fragrant.
  • Add the spiralized zucchini and red pepper flakes. Toss and cook for about 3-4 minutes, until tender yet crunchy.
  • Drizzle in the soy sauce and toss well. Season with salt and pepper to taste.

Serving

  • Plate the noodles, garnishing with green onions and sesame seeds. Serve hot.

Notes

For added protein, toss in cooked shrimp or chicken in the last minute. A sprinkle of lime juice just before serving enhances the flavor immensely.
