  • 1 piece bell pepper, sliced Any color you prefer.
  • 1 cup broccoli florets Fresh or frozen can be used.
  • 1 medium carrot, julienned For added crunch and sweetness.
  • 1/4 cup soy sauce Use low-sodium if preferred.
  • 1 tablespoon chili paste Add more for desired spice level.
  • 1 teaspoon ginger, grated Fresh ginger recommended.
  • 3 cups cooked rice To serve on the side.

Preparation

  • In a large skillet or wok, heat the vegetable oil over medium-high heat.
  • Add the sliced chicken and cook for about 5-7 minutes, until it’s cooked through and slightly golden.
  • Add the minced garlic and grated ginger, stirring for about 30 seconds.
  • Add the bell pepper, broccoli, and carrot. Stir-fry for another 3-4 minutes.
  • Pour in the soy sauce and chili paste, stirring to combine, and let it simmer for a minute or two.
  • Taste and adjust the seasoning if necessary.
  • Serve the stir-fry over a bed of warm, fluffy rice.
