Ingredients
  

Corn and Vegetables

  • 4 cups fresh corn (about 4 ears or 1 can of corn, drained)
  • 1 medium red bell pepper, chopped
  • 1 small red onion, finely chopped
  • 1 cup shredded carrots
  • 1/2 cup chopped cilantro (optional, but highly recommended!)

Dressing

  • 1/4 cup mayonnaise
  • 2 tablespoons lime juice (about 1 lime)
  • 1 tablespoon honey to balance the spice
  • 1-2 teaspoons your favorite hot sauce adjust based on your heat preference

Preparation

  • If you're using fresh corn, get the kernels off the cob by holding it upright in a bowl to prevent kernels from flying everywhere.
  • In a large mixing bowl, add the corn, red bell pepper, red onion, shredded carrots, and cilantro. Toss them together.
  • In a separate bowl, whisk together the mayonnaise, lime juice, honey, and hot sauce. Adjust the heat to your liking.
  • Pour the dressing over the corn mixture and toss until well coated. Season with salt and pepper to taste.
  • Cover and let it chill in the refrigerator for at least 30 minutes for the best flavor.

Notes

This slaw tastes even better the next day as the flavors deepen. For a crunchier slaw, toss in some crushed tortilla chips before serving.
