  • 1 pound salmon fillets (skin-on or skin-off)
  • 1 pound large shrimp (peeled and deveined)
  • 2 tablespoons Cajun seasoning (adjust based on spice tolerance)
  • 1 tablespoon olive oil
  • 1 tablespoon butter (adds richness)
  • 2 cloves garlic (minced)
  • 1 each bell pepper (diced)
  • 1 small onion (diced; suggest sweet variety)
  • 1 cup cherry tomatoes (halved)

Preparation

  • Gather all your ingredients. Take your time chopping the veggies for a beautiful presentation.

Cooking

  • In a large skillet over medium heat, melt the butter and olive oil together. Add the diced onions and bell peppers. Sauté for about 3-4 minutes until softened.
  • Add the minced garlic and stir for about 30 seconds.
  • Season the shrimp and salmon with Cajun seasoning, salt, and pepper. Place the salmon fillets skin-side down in the pan and add the shrimp around them. Cook for about 4-5 minutes on each side.
  • Halfway through cooking, toss in the cherry tomatoes.
  • Once cooked through, plate the dish and garnish with fresh parsley.

Notes

Adjust spice levels to your preference. Frozen shrimp should be thawed and patted dry before cooking. Add other vegetables like spinach or zucchini for variation.
