  • Salt and pepper, to taste Don't skimp on seasoning!
  • 1 cup flour For dredging the pork chops.
  • 2 tablespoons olive oil For searing the pork chops.
  • 1 medium onion, sliced For added flavor in the sauce.
  • 2 cups chicken broth To deglaze the pan and create sauce.
  • 1 cup heavy cream For a rich and creamy sauce.
  • 1 teaspoon garlic powder For added flavor.
  • 1 teaspoon thyme Fresh or dried, for flavor.
  • Fresh parsley for garnish Optional, for presentation.

Preparation

  • Pat the pork chops dry and season them generously with salt and pepper.
  • Coat each pork chop in flour, shaking off any excess.

Cooking

  • Heat olive oil in a large skillet over medium-high heat. Add the pork chops and sear them for about 3-4 minutes on each side until golden brown.
  • Remove the pork chops from the skillet and add the sliced onions. Sauté until soft and slightly caramelized, about 5 minutes.
  • Pour in the chicken broth, scraping up any bits stuck to the bottom of the pan.
  • Lower the heat and stir in the heavy cream, garlic powder, and thyme. Let simmer for a few minutes to thicken the sauce.
  • Return the pork chops to the skillet and let them simmer in the sauce for another 10-15 minutes.
  • Plate the smothered pork chops, drizzling gravy all over. Garnish with fresh parsley if desired.

Notes

Substitute heavy cream with half-and-half or a dairy-free option for a lighter dish. For extra flavor, add mushrooms or bell peppers when sautéing onions.
