  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon smoked paprika
  • 1 tablespoon dried thyme
  • 1 tablespoon dried oregano

Preparation

  • Pat the whole chicken dry with paper towels to ensure crispy skin in the slow cooker. Rub the olive oil all over the chicken.

Seasoning

  • In a small bowl, mix garlic powder, onion powder, smoked paprika, thyme, oregano, salt, and pepper. Rub this mixture thoroughly into the chicken skin.

Cooking

  • Place the seasoned chicken into the slow cooker. Cover and cook on low for about 6-7 hours until the meat is tender and juicy.
  • About 30 minutes before it's done, lift the lid cautiously. If desired, turn the heat to high for the last 30 minutes to achieve a crispier texture.

Serving

  • Once cooked, carefully remove the chicken from the cooker and let it rest for about 10 minutes before carving. Serve with your favorite sides.

Notes

Avoid lifting the lid too often while cooking to preserve heat. Store leftovers in an airtight container for 3-4 days in the fridge or freeze for up to 3 months. Feel free to adapt the spices for personal preference.
