  • 4 pieces boneless, skinless chicken breasts
  • 1 cup baby carrots
  • 1 cup broccoli florets
  • 1 piece bell pepper, chopped Your choice of color
  • 1/2 cup honey
  • 1/4 cup soy sauce or tamari for a gluten-free option
  • 4 cloves garlic, minced
  • 1 teaspoon ginger fresh or powdered
  • Salt and pepper, to taste
  • Cooked rice or quinoa, for serving

Instructions
 

Preparation

  • Place the chicken breasts at the bottom of the slow cooker. Season them with a pinch of salt and pepper.
  • Add the baby carrots, broccoli, and bell pepper to the slow cooker.
  • In a separate bowl, whisk together the honey, soy sauce, garlic, and ginger, then pour it over the chicken and veggies.

Cooking

  • Cover the slow cooker and set it to low for 6-8 hours.

Serving

  • After cooking, serve the chicken and veggies over cooked rice or quinoa, drizzling the sauce on top.

Notes

Feel free to swap in your family’s favorite veggies or add red pepper flakes or sriracha for a kick. Leftovers can be stored in an airtight container in the fridge for up to 3 days.
