Ingredients
  

Main Ingredients

  • 1 pound ground beef or substitute with ground turkey or plant-based alternative
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes with chilies for extra flavor, if desired
  • 1 packet ranch seasoning
  • 1 cup shredded cheddar cheese for topping
  • to taste salt and pepper

Optional Ingredients

  • to taste diced onions for added flavor
  • to taste diced bell peppers for added crunch
  • to taste jalapeños for a spicy kick

Instructions
 

Preparation

  • In a skillet over medium heat, brown the ground beef until it’s no longer pink.
  • Optionally, add diced onions and bell peppers for extra flavor.

Combine Ingredients

  • Transfer the browned beef to your slow cooker and add the black beans, corn, diced tomatoes, ranch seasoning, salt, and pepper. Stir well.

Cooking

  • Cover and cook on low for about 4-6 hours or on high for 2-3 hours.

Finishing Touch

  • Sprinkle the shredded cheddar cheese on top, cover, and let it melt for about 15 minutes.

Serving

  • Give it a final stir before serving. Enjoy hot, optionally topped with fresh cilantro or sliced green onions.

Notes

This casserole reheats well and makes a great option for leftovers. Store in an airtight container in the fridge for up to three days, or freeze portions for future meals.
