Ingredients
  

Main Ingredients

  • 1 pound beef chuck, cut into cubes
  • 4 cups beef broth
  • 3 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 inch piece ginger, sliced
  • 2 pieces green onions, sliced
  • 2 packs ramen noodles (discard the seasoning packets)
  • 2 cups baby spinach
  • optional Hard boiled eggs Optional, but a great addition!
  • to taste Sesame seeds for garnish

Instructions
 

Preparation

  • In a skillet over medium heat, sear the beef cubes for about 3-4 minutes until browned. This step is optional.
  • In your slow cooker, mix the browned beef with beef broth, soy sauce, garlic, ginger, and half of the green onions. Stir to combine.

Cooking

  • Cover your slow cooker and set it to low for 6-8 hours.
  • About 30 minutes before serving, add in the ramen noodles and let them cook in the broth.

Finishing Touches

  • Just before serving, stir in the baby spinach and let it wilt.
  • Top each bowl with hard-boiled eggs, remaining green onions, and sesame seeds.

Notes

For a bit more spice, add chili paste or sriracha to your broth. You can prep all ingredients the night before.
