Simple Mixed Vegetable Quiche

Ingredients
  

Base Ingredients
  • 1 piece ready-made pie crust (store-bought or homemade)
  • 1 cup fresh spinach, roughly chopped
  • 1 cup mixed bell peppers, diced
  • 1 cup mushrooms, sliced
  • 1 small onion, finely chopped
  • 1 cup shredded cheese (cheddar, mozzarella, or feta)
Egg Mixture
  • 4 large eggs
  • 1 cup milk or cream whatever you have on hand
  • to taste Salt
  • to taste Pepper
  • a pinch nutmeg (optional) for added flavor

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, sauté the onions, bell peppers, and mushrooms over medium heat until tender, about 5–7 minutes.
  3. Stir in the chopped spinach for the last couple of minutes until it wilts.
Mixing
  1. In a mixing bowl, whisk together the eggs, milk or cream, and season with salt, pepper, and nutmeg if using.
Assembly
  1. Spread the sautéed veggies evenly across the bottom of your pie crust.
  2. Sprinkle the shredded cheese on top, and then pour the egg mixture over it.
Baking
  1. Bake in the preheated oven for about 35–40 minutes, or until the quiche is set in the middle and lightly browned on top.
Serving
  1. Let the quiche cool for a few minutes before slicing it into wedges. Serve warm or at room temperature.

Notes

Feel free to use any combination of veggies you like or have on hand. Optionally add fresh herbs like basil or parsley before serving. It's not about appearance; focus on the flavor!
