Shrimp & Sausage Nacho Explosion

Ingredients
  

For the Nacho Explosion

  • 1 pound large shrimp, peeled and deveined
  • 1 pound sausage (Andouille or your favorite)
  • 1 bag tortilla chips the crunchier, the better!
  • 2 cups shredded cheese (Cheddar, Monterey Jack, or a blend)
  • 1 cup black beans, rinsed and drained optional for extra heartiness
  • 1 cup diced tomatoes fresh or canned
  • 1/2 cup sliced jalapeños for those who like the heat!
  • 1 avocado diced for creaminess
  • 1/2 cup sour cream for that cool touch
  • 1/4 cup fresh cilantro, chopped to garnish

For the Spicy Shrimp Marinade

  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 to taste salt and pepper
  • 1 lime Juice of 1 for a little zing!

Instructions
 

Preparation

  • In a bowl, combine olive oil, garlic powder, paprika, lime juice, salt, and pepper. Toss in the shrimp and let them soak up those flavors for about 15-20 minutes.
  • While the shrimp is marinating, cook the sausage in a large skillet over medium heat for about 5-7 minutes until browned and cooked through. Remove from skillet and set aside.

Cooking

  • In the same skillet, add the marinated shrimp and cook for 3-4 minutes on each side until pink and fully cooked.
  • Preheat your oven to 350°F (175°C). On a large baking sheet, spread out the tortilla chips and layer them with cooked sausage, shrimp, black beans, diced tomatoes, and half of the cheese. Sprinkle the remaining cheese on top.
  • Bake in the preheated oven for 10-12 minutes, or until the cheese is bubbly and golden.

Assembly

  • Once out of the oven, garnish with sliced jalapeños, diced avocado, sour cream, and fresh cilantro.

Notes

Feel free to experiment with toppings or swap ingredients. For a stretchy cheese effect, mix different cheeses. If you want it spicier, add hot sauce to the marinade.
