Filling ingredients

  • 1 cup cooked shrimp, chopped Can use leftover shrimp.
  • 1 cup crab meat (canned or fresh) Substitute with more shrimp or chicken if desired.
  • 1 cup shredded cheese (cheddar or Monterey Jack) Cheddar offers a sharper flavor.
  • 1 tablespoon lime juice Freshly squeezed is preferable.
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder Adjust to taste.
  • to taste salt and pepper
  • as needed corn tortilla wraps Use as many as needed for the filling.
  • as needed cooking oil for frying Can use vegetable or canola oil.

Instructions
 

Preparation

  • In a mixing bowl, combine the cooked shrimp, crab meat, cheese, lime juice, garlic powder, chili powder, salt, and pepper. Mix until well blended.

Assembly

  • Take a corn tortilla and place about a tablespoon of the filling towards one edge. Roll it up tightly like a burrito and tuck in the sides.

Frying

  • Heat a skillet with a thin layer of cooking oil over medium heat. Place the nacho sticks seam side down and fry for about 3-4 minutes on each side until golden brown.

Serving

  • Drain on paper towels for a minute. Serve with your favorite dipping sauces.

Notes

Avoid overstuffing the tortilla to prevent spills during frying. You can prep the filling in advance. For an extra kick, add chopped jalapeƱos. Leftovers can be stored in an airtight container in the fridge for up to two days.
