Preparation

  • Rinse and thoroughly dry the scallops. Season both sides with salt and pepper.

Cooking the Scallops

  • In a large skillet over medium-high heat, warm the olive oil until it shimmers.
  • Place the scallops in the skillet, making sure not to overcrowd them.
  • Sear the scallops for 2-3 minutes on one side until golden crust forms. Flip gently and sear for another 1-2 minutes.

Making the Sauce

  • Pour in the heavy cream and sprinkle Parmesan cheese, stirring until the cheese melts and the sauce is creamy.

Finish and Serve

  • Return the scallops to the pan, coating them in the garlic sauce.
