  • 1 pound scallops, cleaned
  • 1 pound shrimp, peeled and deveined

Cooking Essentials

  • 4 tablespoons unsalted butter divided
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 lemon juice
  • 1 lemon zest
  • Salt and pepper, to taste

Garnish

  • Fresh parsley, chopped for garnish

Preparation

  • Rinse the scallops and shrimp under cold water and pat them dry with paper towels.

Cooking

  • In a large skillet, heat 2 tablespoons of butter and 2 tablespoons of olive oil over medium-high heat.
  • Once the oil shimmers, add the scallops in a single layer. Let them sear without moving them for about 2-3 minutes until golden brown. Flip and cook for an additional 2 minutes. Remove the scallops from the skillet.
  • In the same skillet, add the shrimp and cook for 2-3 minutes until they’re pink and opaque. Add the minced garlic and sauté for about a minute.
  • Squeeze in the fresh lemon juice and zest, and add the remaining 2 tablespoons of butter. Stir to combine and season with salt and pepper.
  • Return the scallops to the skillet, gently toss everything together, and let it heat for another minute. Remove from heat, garnish with parsley.

Notes

Don't crowd the pan to avoid steaming instead of searing. For added heat, consider adding a pinch of red pepper flakes. Serve with white wine for an elevated experience.
