Base Ingredients

  • 2 tablespoons olive oil For sautéing the aromatics
  • 4 pieces scallions, chopped Reserve some green tops for garnish
  • 4 cloves garlic, minced
  • 1 thumb-sized piece ginger, sliced
  • 1 whole chicken or chicken bones Whatever you can find at the store
  • 2 pieces lemons, zest and juice
  • 8 cups water To cover the chicken and vegetables
  • to taste salt and pepper For seasoning

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the chopped scallions, minced garlic, and sliced ginger to the pot. Sauté for about 3-4 minutes.
  • Toss in your chicken (or chicken bones) and mix to combine the ingredients.

Cooking

  • Pour in the 8 cups of water and bring the mixture to a gentle boil.
  • Reduce the heat to low, cover the pot, and let it simmer gently for at least 1.5 to 2 hours.
  • Once the broth is rich and flavorful, stir in the lemon zest and juice, then season with salt and pepper to taste.
  • Strain the broth through a fine-mesh sieve into a clean bowl or pot, discarding the solids.
  • Optionally, toss in some reserved scallion greens for garnish.

Notes

For even more flavor, use leftover bones from previous meals. You can also add other vegetables like carrots or celery. Store leftovers in an airtight container in the fridge for about a week or freeze for longer storage.
