Main Ingredients

  • 3 lbs oxtails, trimmed
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 carrots, diced
  • 1 stalk celery, diced
  • 2 cups beef broth
  • 1 cup red wine (a cabernet sauvignon works wonders!)
  • 2 tablespoons tomato paste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • Fresh parsley, chopped, for garnish

Preparation

  • Make sure your oxtails are trimmed and cleaned. Season them with salt and pepper.

Searing

  • Heat the olive oil in a large Dutch oven over medium-high heat. Add in the oxtails and sear each side until they’re golden brown, about 3-4 minutes per side.

Sautéing Vegetables

  • Remove the oxtails from the pot. In the same pot, add the onion, garlic, carrots, and celery. Sauté for about 5 minutes.

Mixing Ingredients

  • Stir in the beef broth, red wine, tomato paste, bay leaves, and thyme. Scrape any brown bits off the bottom of the pot.

Simmering

  • Return the oxtails to the pot, ensuring they are submerged in the liquid. Bring to a gentle boil, then reduce heat to low. Cover and let simmer for 3-4 hours until the meat is tender.

Serving

  • Remove the oxtails and bay leaves from the pot. Let the sauce thicken for another 10 minutes if needed. Serve the oxtails over mashed potatoes or rice, drizzling sauce on top and garnishing with fresh parsley.

Notes

Prep ahead: You can prepare the oxtails the day before, refrigerate, and reheat gently. If you're skipping the wine, use extra beef broth. Lumpy sauce is simply flavor waiting to burst out.
