For the Braised Beef

  • 2 pounds beef chuck roast Well-marbled for better flavor.

  • 2 tablespoons olive oil For searing the beef.
  • 4 large onions (yellow or sweet) Sliced for caramelization.
  • 2 cups beef broth For the braising liquid.
  • 1 cup dry red wine Or additional broth for a non-drink option.
  • 2 cups mushrooms (cremini or button) Sliced for flavor.
  • 4 sprigs fresh thyme Or use 1 teaspoon dried thyme.
  • 2 cloves garlic, minced For added aroma.
  • 1 tablespoon balsamic vinegar For a touch of acidity.

For the Gruyère Toast

  • 1 baguette sliced For making the toast.
  • 2 cups grated Gruyère cheese For topping the toast.
  • to taste amount Fresh parsley, chopped For garnish.

Instructions
 

Preparation

  • Generously sprinkle the beef chuck roast with salt and black pepper.
  • In a large pot or Dutch oven, heat the olive oil over medium-high heat and sear the beef roast for about 4-5 minutes per side until golden brown.
  • Remove the beef and add sliced onions to the pot. Cook for about 15-20 minutes until caramelized.
  • Stir in beef broth, red wine, mushrooms, thyme, minced garlic, and balsamic vinegar. Bring to a gentle simmer.
  • Cover and braise on low heat for about 3 hours.

Preparing the Gruyère Toast

  • Preheat the broiler.
  • Arrange baguette slices on a baking sheet, top with grated Gruyère cheese, and broil until golden and bubbly.

Serving

  • Spoon the beef and mushroom mixture over a piece of Gruyère toast and garnish with fresh parsley.

Notes

This dish gets better as leftovers and can be made ahead of time. Store in an airtight container and reheat as needed.
