  • 1 pound Italian sausage Mild or spicy, your choice
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes No need to drain
  • 4 cups fresh spinach Healthy addition
  • 1 package (9 oz) cheese tortellini
  • 1 teaspoon Italian seasoning
  • to taste Salt
  • to taste Pepper
  • for garnish Fresh parsley Optional, but adds a pop of color

Cooking Instructions

  • In a large pot, over medium heat, crumble and cook the sausage until it’s brown and crispy.
  • Add diced onion and cook for about 3-4 minutes until soft. Then add minced garlic and cook for an additional 30 seconds.
  • Pour in the chicken broth and stir in the diced tomatoes and Italian seasoning. Bring to a gentle boil.
  • Stir in the tortellini and cook according to package instructions (usually about 3-5 minutes).
  • Once the tortellini is tender, add the spinach and stir until it's just wilted, about a minute.
  • Season with salt and pepper to taste. Ladle into bowls and garnish with fresh parsley if desired.

Notes

Leftovers can be stored in the fridge for up to 3 days. You can add other vegetables like carrots or bell peppers for extra flavor. If freezing, leave out the tortellini to prevent it from becoming mushy.
