  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Wet Ingredients

  • 1 cup buttermilk (or milk) You can substitute with regular milk.
  • 1 large egg
  • 2 tablespoons melted butter Plus a bit for greasing the pan.

Main Ingredients

  • 8-10 links cooked sausage, cut into thirds

Preparation

  • Preheat your oven to 400°F (200°C). Grease a mini muffin tin with melted butter or cooking spray.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
  • In another bowl, mix the buttermilk, egg, and melted butter until combined.
  • Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  • Fold in the sausage pieces into your pancake batter.
  • Spoon the batter into your mini muffin tin, filling each cup about halfway full.

Baking

  • Bake for about 15-18 minutes or until golden brown. Allow them to cool slightly before removing from the tin.

Serving

  • Serve warm with your favorite syrup or dipping sauce.

Notes

These Sausage Pancake Bites can be stored in the fridge for up to 5 days, or frozen for longer shelf life. Customize with added ingredients like cheese or herbs.
