  • 1 pound fresh asparagus, trimmed
  • 4 slices of bacon, chopped who doesn’t love bacon?
  • 2-3 cloves garlic, minced or more if you’re a garlic aficionado
  • 1 cup shredded cheese Parmesan or mozzarella work well
  • to taste olive oil
  • to taste Salt
  • to taste Pepper
  • Optional: Lemon zest or red pepper flakes for a little zing!

Preparation

  • Preheat your oven to 400°F (200°C). Wash the asparagus and trim off the woody ends.

Cooking

  • In a large skillet, cook the chopped bacon over medium heat until crispy.
  • Once the bacon's ready, toss in the minced garlic and sauté for about 1 minute until fragrant.
  • On a large baking sheet, spread the trimmed asparagus and drizzle with olive oil. Sprinkle with salt and pepper.
  • Add the crisped bacon and garlic mixture to the baking sheet and toss to combine.
  • Generously sprinkle shredded cheese over the top.
  • Roast in the oven for about 15-20 minutes or until the asparagus is tender and the cheese is bubbly.
  • Check halfway to ensure even roasting. Optionally, sneak a piece of bacon.
  • Remove from the oven and sprinkle with lemon zest or red pepper flakes, if desired.

Notes

For cheese, consider using goat cheese for a tangy flavor. Turkey bacon or vegan alternatives can replace pork bacon. You can prep asparagus and bacon in advance.
