Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the beef tenderloin generously with salt, pepper, and fresh rosemary. In a large skillet, heat the olive oil over medium-high heat.
  • Once hot, add the tenderloin and sear on all sides until golden brown, about 3-4 minutes per side.

Cooking

  • Transfer the sealed tenderloin to a baking dish and roast in the oven for about 20-25 minutes for medium-rare, or until it reaches your desired doneness (an internal temperature of 130-135°F for medium-rare).
  • Remove from the oven and let it rest for at least 10 minutes before slicing.

Preparing the Seafood Topping

  • In the same skillet used for the tenderloin, melt the butter over medium heat and add the minced garlic.
  • Sauté until fragrant, about 1 minute.
  • Stir in the chopped lobster, heavy cream, and lemon juice. Season with salt and pepper to taste.
  • Cook until everything is heated through and the sauce thickens slightly, about 3-4 minutes.

Serving

  • Slice the rested tenderloin into thick pieces.
  • Drizzle the rich seafood topping generously over each slice and garnish with fresh parsley.

Notes
